“The art of sfoglina” at Ca’pelletti Firenze, part of “The legacy of women” calendar of events

Just one year after its opening, the cosy inn in the city centre hosted a cooking show starring Erica Liverani, winner of MasterChef Italia, and Romana Tamburini, chairwoman of Surgital S.p.A., on the food of the past, present and future.

 Lavezzola (RA), 27 November 2023 On the afternoon of Sunday, 26 November, the Ca’Pelletti in via dei Benci 41r in Florence, hosted the event “The art of the paster maker: two generations compared”. Erica Liverani, winner of the fifth edition of MasterChef Italia, the most popular cooking show ever, and Romana Tamburini, chairwoman of Surgital S.p.A. – the leading Italian producer of fresh-frozen pasta – discussed the preparation of “sfoglia” (rolled dough), an icon of Italian heritage, recognised worldwide for its excellence.   The format involved a discussion between the two special guests in a pleasantly entertaining context, combining a first-hand account of a story depicting the tradition and passion typical of Romagna, and that of a modern influencer and cooking expert.

For me, cooking is the search for emotion. It brings to mind old memories which I love reliving through cooking, its gestures and flavours,” stated Erica Liverani.It has been a passion of mine since I was a child and I am absolutely certain that cooking for others is the greatest act of love”.

“Our aim is to make a good, healthy product, as well as to bring tradition and flavour into kitchens all around the world,” confirmed Romana Tamburini. “Handing down the art of fresh pasta making is our job, doing our best to keep the tradition alive even for future generations, proud of the all-Italian history that defines us.”

The event concluded with a tasting of Romagna’s traditional dishes, highly appreciated by guests, who were also in agreement that, despite being produced with industrial equipment, it was no different to hand-made pasta, just as Surgital loves to point out: “We do with machines what we used to do with our hands”.

The function was one of the non-scheduled events connected with the 6th edition of “The Legacy of Women”, organised by ELLE under the artistic direction of Serena Dandini, and a perfect fit for this event dedicated to the “Mothers of the Homeland”, acknowledging the value of women and their vast contribution to society in the name of female empowerment.

Ca’Pelletti Firenze successfully opened its doors just one year ago in the city centre and is one of several inns owned by Surgital: welcoming, entertaining venues in which to savour good cuisine and the atmosphere of Romagna in a perfect casual dining style, open 365 days a year, starting with its signature breakfast and continuing all day, offering uninterrupted service for lunch, snacks, aperitifs and dinner, with no time constraints.
