From Field to Kitchen: a Story of Passion Between Surgital and Orogel

A collaboration built on shared values, cultivating freshness, innovation, and respect.

Some dishes tell a story even before being tasted.
Behind a creamy filling, a vegetable that retains its color and the scent of the field, lie skills passed down through generations and precise choices based on vision and respect.
For over 15 years, Surgital and Orogel have worked together to build a supply chain that begins in the field and ends in the kitchen—on the plate—without losing anything: neither flavor nor values.
A partnership born of deep affinities—respect for natural cycles, resource care, environmental attention, certified quality—and nurtured over time, becoming a shared journey of trust, exchange, and ongoing research.

A Pact Between Land and Table

When an Orogel ingredient enters Surgital’s facilities, it already carries a story of careful choices and innovation. A legacy of experience and passion.
That’s why Orogel—with over 1,600 farming partners and three production plants, including its main site in Cesena in the heart of the Food Valley—is a true specialist supplier.
It’s a partnership that works because they speak the same language: quality.

Orogel oversees the entire process, from field to freezing, to ensure each product performs at its best in the kitchen—whether it stars in a dish or serves as a component in a Surgital recipe. Every step is designed to preserve flavor, texture, and nutritional value.

“When we select a product destined for Surgital, we know it has to deliver even after freezing. That’s why every decision—from seed to harvest—is made with cooking performance, firmness, and flavor in mind. It’s a job that starts in the field but lives on the plate,” explains Daniele Miserocchi, Industrial Channel Coordinator at Orogel.

Behind these results are constant research and innovation, along with swift and precise processes. But above all, it’s the daily work of Orogel agronomists who support farmers through every phase, monitoring soil, irrigation, and plant health up to the perfect harvest moment.

“Each Orogel agronomist returns to the field at least three times, from sowing to harvest, to monitor crop progress step by step. Only then can we harvest at the precise moment each plant expresses its best—at the peak of ripeness. That’s how we naturally preserve the highest concentration of vitamins and minerals,” says Matteo Pollini, Head of Environmental Management at Orogel.

Freezing as a Guarantee of Authentic Freshness

Stopping time to preserve what truly matters: that’s the power of freezing.
Surgital and Orogel choose it because it’s the safest, most natural method that respects quality. No preservatives, no additives, no degradation—just pure, lasting freshness.
From harvest to freezing, every minute counts. Orogel ensures this speed with a short supply chain, three Italian facilities, and carefully selected cultivars bred for optimal performance in the cold chain.

The same applies to Surgital: its pasta, made using traditional methods, is frozen immediately after preparation. The result? A product of artisanal intelligence that preserves all the qualities of freshly made pasta, ready to deliver excellence in any kitchen.

This is how Surgital and Orogel ensure artisan-level quality at scale.
Here is where they meet: in the shared choice of freezing as an ally for quality, safety, and performance. But also for sustainability—because it reduces waste and extends shelf life.

Real Sustainability

And speaking of sustainability, here’s another strong connection between Surgital and Orogel. Both share a vision rooted in responsibility, respect for natural resources, and consistent commitment across the entire supply chain.
At Orogel, this translates into tangible investments: research into more sustainable farming methods, photovoltaic and agrivoltaic systems, cogeneration, repurposing by-products into electricity and biomethane, several routes served by LNG-fueled vehicles, and 100% recyclable packaging.
Every decision is made to reduce environmental impact and maximize resource use—a vision that naturally aligns with Surgital’s commitment to responsible production, environmental care, and people’s wellbeing.

“Sustainability requires daily consistency,” says Matteo Pollini. “That’s why it’s important to work with those who share the same vision and embrace it as a concrete choice.”

An Evolving Alliance

The relationship between Surgital and Orogel is far from static. It’s made of exchanges, shared projects, and mutual listening.
Surgital sources vegetables for its fillings; Orogel, in turn, uses Surgital pasta in its ready-made meals.
A genuine partnership that has led over time to custom solutions.
One example? A specific variety of eggplant was selected for compact, uniform slices and a production process that enhances its fragrance and flavor.
