Laboratorio Tortellini® is alta tradizione. It is an ancient family recipe that started from just a small artisanal pasta workshop and inspired a dream of bringing fresh Italian pasta and the authentic flavours of Romagna to the whole world. The first Surgital brand, with over 140 references coming from almost every region of the Bel Paese, was launched to satisfy the creativity and needs of every restaurateur, becoming an authentic benchmark along with other brands, in the foodservice sector.
Dough that's state-of-the-art.
For a perfect dough, we at Surgital have identified some valuable rules.
To make it more elastic and resistant in cooking, we use durum wheat semolina processed by the finest Italian mills and fresh pasteurized barn eggs - at least 5 per kilo of flour - to give it an unmistakable golden colour. In addition, the production environment, as per tradition, is kept warm and humid, while the expert eye of our master pasta makers constantly checks that the quality of the products is always excellent.
It's easy to talk pasta sheets, but not all pasta sheets are made equal. The pasta sheet differs according to how the pasta dough is rolled: it can be more grooved, rougher or more porous.
Our dough sheet is Sfoglia Antica "old-fashioned", a dough that's gently veined like the one rolled with a rolling pin. We have two more pasta sheets: Sfoglia Rustica "rustic", a dough that generously collects the sauce and Trafilata al bronzo "bronze-cut", a very porous dough for drawn pasta, both long and small.

De Gusto® is much more than a school or a kitchen: it is the place where we welcome the new here at Surgital, where things happen. It is an open door workshop where we invite customers, suppliers and collaborators to see how we work, actively engaging them in an exchange of experience and expertise. The Surgital experience has its roots in the heritage of traditional Italian food but is always ready to renew and evolve through the careful analysis of new culinary trends and a novel system designed specifically to repeat as faithfully as possible the movements of the chefs and the human hand to improve production performance without ever renouncing product excellence.
