Ingredients for 4 people
400 g Gran Gnocchi di patata
100 g mortadella
250 g red carrot
50 g pre-cooked peas
250 g tomato sauce
50 g ‘nduja (spicy, spreadable pork sausage)
250 g ground black pork
60 g Tropea onions
30 g pistachio pesto
20 g toasted pistachio kernels
extra virgin olive oil, salt and pink pepper to taste
ricotta salata (salted ricotta cheese) to taste
Procedure
In a pan, put a little extra virgin olive oil and heat it, add diced onion, ground meat, diced mortadella and red carrot, and sauté on low heat. After 6-7 minutes, add tomato sauce, ‘nduja, peas and 50 g water. Cook for about 10 minutes.
Meanwhile, prepare water for Gran Gnocchi with a pinch of salt; as soon as it boils, pour in Gran Gnocchi for about a minute, drain and place in a pan, adding pistachio pesto and pink pepper. Blend well and put in a plate. Sprinkle grated ricotta salata on top and decorate with toasted pistachio kernels.
