Ingredients for 4 people
8 Crespelle naturali
4 peaches
100 g fromage blanc (spreadable cheese)
½ l dry Marsala wine
2 tablespoons acacia honey
2 pimento berries
2 juniper berries
1 pinch of cinnamon
Procedure
In a pan, cook pitted and sliced peaches in Marsala wine. Add pimento, juniper berries and cinnamon. When cooked, filter, setting Marsala wine aside, and blend into sauce. Spread sauce on Crespelle and roll them up.
Add honey to Marsala wine and cook until you obtain a thick sauce.
Place Crespelle on a serving dish, pour Marsala wine sauce over them and garnish with fromage blanc quenelle. Serve lukewarm.
