De Gusto® is much more than a school or a kitchen: it is the place where we welcome the new here at Surgital, where things happen. It is an open door workshop where we invite customers, suppliers and collaborators to see how we work, actively engaging them in an exchange of experience and expertise. The Surgital experience has its roots in the heritage of traditional Italian food but is always ready to renew and evolve through the careful analysis of new culinary trends and a novel system designed specifically to repeat as faithfully as possible the movements of the chefs and the human hand to improve production performance without ever renouncing product excellence.

Our creative De Gusto® workshop is constantly evolving and is always open to welcoming new events, leading personalities, and training programmes on fresh pasta and traditional Italian food aimed at diverse target groups. The aim is to experiment with new recipes, new technologies and cooking techniques, new ingredients and combinations to offer innovative recipes with a high level of creativity and service to the HO RE CA channel. Our team of qualified professionals is extensive and varied: our research and experimentation activities are conducted daily by 5 resident chefs, together with other co-workers including technicians, biologists and product testers.

De Gusto® operates in line with our core values: through the pasta academy, our chefs transmit their knowledge to the world with an approach that goes beyond demonstration and show-cooking. The Italy of which we are made is not just good food but also a lifestyle, so promoting and representing Made of Italy means not just preparing a product at its finest but understanding and explaining its characteristics in depth: each fresh pasta product reference tells an Italian story, each recipe a region's tradition, from the selection of the finest ingredients to the right degree of thickness and porosity of the pasta. The products of each brand tell of movements and details that for us it is vital to preserve, conserve and bring to kitchens all over the world through the development of the most advanced technology and the creativity of the finest chefs.
From fresh pasta workshop to company workshop.
De Gusto® represents the culmination of what we are trying to create at every step of our production chain. In the Emilian-Romagna tradition, making dough and pasta is a collective ritual, a meeting between generations, a moment of dialogue and rediscovery of tradition. Today we are an international company open to the world but we try to recreate how things were done in the first small fresh pasta workshop at every level and with all our employees: every kind of initiative and experience is welcomed as we recognize the fundamental and irreplaceable value of every aspect of professionalism. From this encounter between past and future, between traditional skills and innovative technologies, comes the unique experience that we offer every day to our co-workers and visitors, through the dynamic workshop at the De Gusto® Academy.
