We believe that what makes cooking, good cooking is curiosity and a flair for invention linked to new flavours, new cooking methods, and new food combinations. For this reason we have decided to enrich the tradition of pasta with an unusual cooking method: frying.

Take fresh pasta, with firm dough and perhaps filled with meat or vegetables, and fry it. Yes, you got it right: instead of throwing it in boiling water, cook it in oil, simply searing it if you so prefer or turning the dough golden, crunchy, and slightly thicker. Be careful, though, and don’t let the heat ruin it by burning it. As soon as it is golden brown, remove it from the oil, blow over it a little and taste it: you will discover that it will have a completely different flavour.

For years we at Surgital have been preparing excellent fresh pasta according to tradition, deep-freezing it with care and wisdom to make sure that it reaches our customers as good as it were just made. Quick to prepare and with unusual combinations, you can add to fried pasta – also the filled variety – vegetables, meat, fish, or dairy products, fruit and sweet cream, depending on the recipe. A single course, therefore, to eat comfortably seated but even a tasty snack to munch on as you walk home.

Last but not least, it’s ideal to order à la carte, or for home delivery, perhaps during lunch break, prepared on the spot and ready to pick up or using a delivery service.
