Ca’ Pelletti launches its franchising project

Ca’ Pelletti is the Food Retail project of the Surgital Group, the leading Italian company in the frozen fresh-pasta sector. As the first 100 % Italian restaurant format offering home-style, Romagna-inspired cuisine, it is already a well-established brand with six directly operated outlets, revenue up 40 % and more than 400,000 guests served in 2024. In 2025 the first pilot agreements are planned, paving the way for the launch in 2026 of franchising expansion in Italy and abroad.

At its Milan Famagosta restaurant, successfully opened last year, Ca’ Pelletti officially presented its franchising project yesterday to a select audience of leading entrepreneurs already operating in the sector. After a solid growth path begun in 2013 and strengthened by the opening of six company-owned stores in Emilia-Romagna, Veneto, Lombardy and Tuscany, the company is now ready to expand its network with strategic partners and capital willing to invest in a solid, scalable and highly profitable model.

In 2024 Ca’ Pelletti posted revenues of more than € 6 million, a + 40 % turnover increase in 2021-2024, over 400,000 customers served and more than 120,000 signature dishes sold in 2024 (including over 52,000 portions of cappelletti, 29,000 tagliatelle, 24,000 lasagne and over 16,000 piadine). These figures confirm the strong appeal of the brand to a broad and varied clientele: modern families, business people, tourists and organised groups.

“The project was born out of a long phase of experimentation and continuous improvement that began in 2015, with the explicit intention of turning it into a chain right from the start. It is the natural evolution of a journey of listening, research and constant growth in which we have created a model that we are now ready to export and turn into a franchise,” says Elena Bacchini, Founder & CEO of Ca’ Pelletti Retail. “We hope to find partners who, like us, capture the spirit of our Ca’ Pelletti inn – a place to enjoy authentic dishes typical of Italian and Romagna cuisine – and who become its faithful interpreters, starting with pasta, the quintessential icon of the Bel Paese.”

The success of the Ca’ Pelletti model is based on key elements that make it particularly attractive to those wishing to invest in commercial catering: a kitchen that needs no chef, tight control of food costs thanks to quality semi-finished products from its own production and a careful selection of top-tier suppliers, optimised operating processes resulting from a partnership with a major logistics partner for the supply chain, and a multifunctional staff, reducing the need for specialised personnel.

A model for food-retail investors.

Its excellent adaptability to different contexts, continuous investment in R&D, marketing and staff training have made it possible to develop and fine-tune in the field a know-how that can be fully transferred to potential franchisees, together with a recognisable brand identity thanks to distinctive design, in-store communication and a customer experience cared for down to the last detail. The simple yet wide-ranging menu goes from fresh pasta and piadine to meat dishes and big salads, offering something for every moment of the day – lunch, afternoon snack, aperitif and dinner.

Ca’ Pelletti is a retail project owned by the Surgital Group, a producer of frozen fresh pasta that exports to 60 countries worldwide, employing more than 350 people at its Lavezzola (RA) plant and over 500 at group level, with a turnover exceeding € 120 million. The parent company will provide the necessary support for development, first of the pilot phase and then throughout the opening and launch process.
