To pre-cook fresh pasta, with or without filling, and preserve its qualities, we have developed a sophisticated combined pre-cooking method using steam and hot-water spraying, which avoids immersion of the product in water thereby reducing water absorption.
To preserve the characteristics of durum wheat semolina pasta and rice, we use a drum immersion cooker which keeps the cooking water constantly clean using a control system continuously monitoring its starch level. That way we get rice and pasta that's always al dente and never sticky. Afterwards, the product is cooled in a cold water cooker, which lowers the temperature and avoids harmful thermal shocks, while an innovative deep-freezing process using cold air jets freezes it while keeping it in motion thus achieving optimal IQF.

Rice and pasta which is organoleptically unaltered, uniform in appearance, not sticky and well separated, is always “al dente”, and by using different reconstitution methods, is resistant and practical.
